There was a very useful series of airmail related handbooks making up his 'Katalog der Deutschen Luftpost' published privately by Erich Haberer from the 1960s, some going to later editions up to the 1990s.
Teil 3 of this Katalog dealt with 'Sonderflüge und Flugveranstaltungen, Messeflüge, Segelflüge, Unfallpost 1919-1945. I have the 1991 edition.I think this may readily be available second-hand over the internet.
Unfortunately only Haberer Teil 1 and Teil 2 are listed in the current version of the Society's library catalogue (see website) but it may be worth your while dropping our librarian Rex Dixon a line to ask whether there may be a copy of Teil 3 awaiting inclusion in the catalogue.
Incidentally the Michel Zeppelin- und Flugpost-Spezial 2017/18 3rd edition (still current and which I can supply at 20% discount to members) splendid though it is, does not cover Segelflüge.
Regarding you other query, as John Stuart-Clarke has helpfully responded, there is no one master list, it would be vast. Prinz, Lindner, Michel etc websites provide detailed information on their products. I am not supplying Stanley Gibbons products at present as their trade terms are no longer attractive and their service has been very poor of late. I am ready to help on whatever you are looking for.
